Pumpkin Biscotti 4 years 6 months ago #40471

There have been so many threads on this forum recently about various digestive complaints, particularly elimination problems, in deerhounds that I want to share a trick learned from a french bulldog breeder, and that is to feed pumpkin daily to your dogs. If your dog is having difficulty clearing his system, add a scoop (2 Tbsp) of canned or cooked pumpkin on his food once a day. Below is my treasured recipe for dog cookies made with pumpkin, and a few of these should always be in one's pocket ready to hand out as treats. :)

PUMPKIN BISCOTTI WITH GINGER
3 cups flour (use a combination of white, whole wheat, oat, rye, whatever you have on hand)
1/2 tsp cinnamon
1/2 tsp baking powder
1 cup canned pumpkin (or fresh cooked if you have it, I grow it in my garden for this purpose, then you can add a few seeds)
1/4 cup honey or molasses or agave nectar
1/4 cup water
2 Tbsp vegetable or olive oil
1 Tbsp grated fresh ginger (or a tsp dried ginger, very good for the tummy)
1 egg
1 tsp vanilla

Preheat oven to 350 degrees.
In a large bowl combine flour, cinnamon and baking powder.
In another bowl stir together pumpkin, honey, water, oil, ginger, egg and vanilla.
Add to the flour mixture and stir until combined.

On a parchment lined baking sheet form the dough into two logs.
Brush the tops with beaten egg for a glossy finish.
Bake for 30 minutes until firm.

Reduce oven temperature to 250 degrees.
Allow the logs to cool and then cut into 1/2 in slices with serrated knife.
Place biscuits back in oven for another hour, turning them halfway.

Turn the oven off and allow to cool completely.

Have fun with this!

I dont know if we can get canned pumpkin here in the UK - does anyone know where we can get it?

The only nearest equivilant to pumpkin would be butternut squash and my hounds love this added to their food.
